Gul Poli is a traditional Maharashtrian festive flatbread prepared especially during Makar Sankranti. It is made by stuffing a soft wheat flour dough with a sweet filling of roasted sesame seeds (til) and jaggery (gul), sometimes enhanced with peanuts, cardamom, or grated dry coconut.
