Sweet Shankarpali

All-Purpose Flour (Maida) – It makes the base of shankarpali. Use good quality organic maida for the best result.
For a healthy alternative, you can use half whole wheat flour and half all-purpose flour.
Fine Semolina (Barik Sooji) – A little semolina makes it very crispy. Make sure to use fine semolina and not coarse.
Others – You will also need ghee, milk, and oil or ghee for frying.
Powdered Sugar – To make sweet shankarpali, you will
also need powdered sugar. Powder the regular granulated sugar in a
blender and use it in the recipe.DO NOT use confectioner’s sugar which is also sometimes called
powdered sugar. It has cornstarch added to it which might change the
texture of shankarpali.You can also add a little cardamom powder and sesame seeds while making the dough for sweet shankarpali.
Spices – To make savory version of shankarpali, you will also need carom seeds, cumin seeds, black peppers, and salt.

For the dough cover
- 1 cup Rice Flour – 150 grams
- 1.5 cups water
- ¼ teaspoon Ghee or oil
- ¼ teaspoon salt
For sweet stuffing
- 1 cup fresh grated coconut – 100 grams
- 1 cup finely chopped jaggery or grated or powdered jaggery – 200 grams
- 1 teaspoon cardamom powder or 6 to 7 green cardamoms, powdered in a mortar-pestle & husks removed
- ¼ teaspoon grated nutmeg or ground nutmeg powder (jaiphal powder), optional

- ½ teaspoon Cumin seeds
- 1-2 Green chilies chopped finely
